The yellowfin tuna (Thunnus albacares) is a type of tuna found in open waters of tropical and subtropical seas worldwide. It is an epipelagic fish ranging in the top 100 m (330 feet) of the water column.
Pacific bonito meat has a firm texture and a darkish color. The bonito has a moderate fat content. The meat of young or small bonito can be of lighter color, close to that of skipjack tuna, and is sometimes used as a cheaper substitute.
The albacore is a type of tuna in the family Scombridae. It is the only tuna species which may be marketed as "white meat tuna" in the United States. Lengths range up to 140 cm and weights up to 6 kg.
